STRAWBERRY SPINACH SALAD RECIPE

An unusual combination of tastes & textures - straightforward, delicious, and super healthy - Someone brought this salad to a potluck dinner and I had to have the recipe. I have made it many, many times since then and I have been asked for the recipe every time I bring it somewhere. It is also a great way to get kids to eat spinach!

Benefits of strawberry and spinach include;

Spinach: It is extremely nutritious and low in calories. Eating plenty of leafy greens like spinach is key to great health.

Strawberries: They are high in vitamin C, which is great for iron absorption and hair growth. A vitamin C deficiency can lead to split hairs. They provide an impressive amount of vitamin C, with a whopping 149% of the recommended daily value per cup. Strawberries are a perfect immune-boosting food.
STRAWBERRY SPINACH SALAD


INGREDIENTS

⏩2 tablespoons sesame seeds
⏩¹/₂ cup white sugar
⏩¹/₂ cup olive oil
⏩¹/₄ cup distilled white vinegar
⏩¹/₄ teaspoon paprika
⏩1 tablespoon minced onion
⏩7 stalks of fresh baby spinach, rinsed, dried
⏩8 strawberries - cleaned, hulled and sliced
⏩¹/₄ cup almonds, blanched and slivered

METHOD

In a medium bowl, whisk together the sesame seeds, sugar, olive oil, vinegar, paprika, and onion. Cover, and chill for one hour. In a large bowl, combine the spinach, strawberries, and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving.
