Cucumber and Pineapple Salad

Cucumber and Pineapple Salad Recipe

Ingredients
1 tea spoon raisins
1 table spoon pineapple juice
70 gram cucumber
½ small red pepper
55 gram prepared pineapple
1 table spoon French dressing
A pinch of finely chopped fresh mint
A large pinch of sesame seeds

Method of preparation
Soak the raisins in the pineapple juice in a bowl for at least ½ hour.
Thinly slice the cucumber.
Seed the pepper and finely chop.
Chop the pineapple into cubes.
Arrange the cucumber on a serving plate.
Mix the pepper, pineapple and soaked raisins together and pile into the center of the cucumber.
Mix the French dressing and mint together and pour over the salad just before serving.
Sprinkle the sesame seeds over the top and serve immediately.
