Sweet Potato Soup
Just made this soup for 15 teenagers the 10 that were brave enough to try the all vegetable soup absolutely loved it! Half of them came back for seconds and polished off the pot! Wasn't able to get a bowl for myself but managed to steal a spoonful before the vultures came - absolutely delicious.
Sweet Potato Soup Recipe
Ingredients
1 table spoon or margarine
½ small onion, finely chopped
115 gram sweet potato, diced (see photo below)
55 gram carrots, diced
1 table spoon chopped fresh cilantro (or parsley or basil)
A little lemon rind and juice
¾ cup vegetable stock
Freshly ground black pepper
Method of preparation |

Melt the butter or margarine in a pan and cook the onion until transparent, stirring occasionally. |
Add the sweet potato and carrots and allow to sweat over a very low heat for 10-15 minutes, stirring occasionally. |
Add the chopped cilantro, lemon rind and juice, stock and pepper. |
Cover and simmer for 30-40 minutes, stirring occasionally. |
Cool slightly, then liquidize until almost smooth but leaving some texture to the soup. |
Return to the rinsed-out pan and reheat until piping hot, stirring occasionally. |
Garnish with a fresh cilantro leaf and serve immediately. |
