Ingredients:
«»2 cups of Basmati rice
«»30gms beef, cut into 1 inch cubes
«»2 tbsp. pilau masala
«»2 tbsp. butter
«»4 cups vegetable stock (substitute for 2 cups beef/chicken stock)
«»1 1/2 tbsp. tomato paste
«»salt to taste
«»2-3 cloves of garlic, crushed
«»1 large onion, diced
Method:
Boil the beef cubes for 15 minutes because rice cookers faster than beef and this ensures that the rice will not become mushy due to over cooking.
Wash clean the Basmati rice and let soak for 20-25 minutes.
In a sauce pan, saute the onion in butter for 1-2 minutes or until it turns translucent. Add the garlic and toss for 10-20 seconds. I usually add a tbsp of oil with butter to prevent it from browning.
Add the pilau masala over a low flame, toss and add the boiled beef. Stir and let caramelise a little bit.
Stir in the tomato paste, add the pre-soaked rice, stock and season with salt. Remember the stock also has salt so to use that in moderation.
Let it come to a boil and then reduce the heat, cover and let simmer for 10-12 minutes or until the rice is fully cooked.
Using a fork fluff up the rice and serve warm.
