Fried eggplant with kickass sauce

Great side dish. Eggplant
Cut into slices and lay them on paper towels to soak out all the water (top and bottom). Then fry them (deep) in grapes seed oil.

Sauce:
In a small bowl mix:
3 tablespoons vinegar
3 minced garlic
1/4 tsp hot paprika
1/2 tsp chili flakes
1 tablespoon finely chopped cilantro

Dash of salt and fresh ground pepper.
Let it marinate and marry for about 1/2 before drizzling on top of the eggplant pieces.
