CUCUMBER PINEAPPLE SALAD RECIPE

CUCUMBER PINEAPPLE SALAD

This perfectly refreshing Pineapple Cucumber Salad is wonderfully easy to make and simply delicious!

This particular salad is one of my favorites. I took my favorite pineapple salsa recipe, turned down the heat, made the cucumber and pineapple pieces larger and voila – the most refreshing, flavorful salad EVER.

I absolutely adore how the bright yellow of the pineapple contrasts so beautifully with the deep, dark green of the cucumber, cilantro, and lime zest. These pictures really do not do it justice.

The sweetness of the pineapple is balanced by the acidity of the lime and the crunchiness of the cucumber. This recipe is perfectly simple and can easily be scaled for a small dinner or to feed a crowd.

This pineapple salad is the perfect addition to any sort of BBQ or cookout you have planned. It’s also great for those of us who don’t have a lot of time and are craving those fresh, sweet flavors. Enjoy!

Let’s take a closer look at the ingredients in this cucumber pineapple salad recipe

Cucumbers are an excellent source of caffeic acid and vitamin C, two antioxidants with anti-inflammatory properties that help fight oxidative stress and reduce signs of aging. Cucumbers are also packed with water, which means better skin, better hydration, and better removal of toxins from the body.

Pineapple is an incredibly potent super-fruit. It helps the body stay in an alkaline state. Besides its alkaline benefits, it has also shown anti-inflammatory and anti-cancer properties. A study we reported on in April of last year showed that pineapple extract may kill cancer cells.
