This perfectly refreshing Pineapple Cucumber Salad is wonderfully easy to make and simply delicious!

This particular salad is one of my favorites. I took my favorite pineapple salsa recipe, turned down the heat, made the cucumber and pineapple pieces larger and voila – the most refreshing, flavorful salad EVER.

I absolutely adore how the bright yellow of the pineapple contrasts so beautifully with the deep, dark green of the cucumber, cilantro, and lime zest. These pictures really do not do it justice.

The sweetness of the pineapple is balanced by the acidity of the lime and the crunchiness of the cucumber. This recipe is perfectly simple and can easily be scaled for a small dinner or to feed a crowd.

This pineapple salad is the perfect addition to any sort of BBQ or cookout you have planned. It’s also great for those of us who don’t have a lot of time and are craving those fresh, sweet flavors. Enjoy!


⏩1 whole Pineapple
⏩2 whole Cucumbers
⏩1 tomato
⏩Coriander Leaves
⏩1 tbsp. Lemon juice
⏩Salt to taste
⏩1 tsp. Pepper
⏩3 tsp. Honey (optional though)


Peel and dice the pineapple into cubes after you done place them in a bowl then wash and cut your cucumber and pour into the pineapples bowl do the same for the tomato. To make salad dressing - in a cup add lemon juice, salt, pepper, honey and mix it well. In a broader bowl - add cucumber, pineapple, tomato, Coriander leaves, the salad dressing and gently mix it well. Keep this in the refrigerator for about 10 minutes and serve it chill. ENJOY
