EGG AVOCADO SALAD RECIPE


INGREDIENTS

1 ripe fresh avocado, peeled (large ones).
5 hard-boiled eggs, peeled and halved.
1 Tbsp. white wine vinegar.
1 tsp. Dijon mustard.
¹/₂ tsp. salt.
¹/₂ cup minced onion.

DIRECTIONS

Remove and discard yolks of two of the eggs; chop remaining whites and eggs; set aside.

In a bowl, combine half of the avocado, vinegar, mustard, and salt; mash until smooth. Dice remaining avocado and add to mixture along with eggs and onion; mix gently.
Serving Suggestions: Serve on Bread. Garnish with anything you want. (not a must though)
