Kheema (Minced Mutton) Recipe

Ingredients:

4-5 tbsp. oil.
2 medium onions, chopped.
1 tbsp. ginger, minced.
1 tbsp. ginger, sliced.
1 tbsp. garlic, minced.
2 medium tomatoes, pureed.
Salt to taste.
10-12 whole black pepper.
5-6 cloves.
1 stick cinnamon.
1 tbsp. cumin seeds.
1 tsp. chili powder.
1 tsp. turmeric powder.
2-3 tsp. coriander-cumin powder.
1 bunch coriander leaves, chopped.
1 cup peas, frozen or fresh.
250 gms minced mutton, with or without bones.

Method:

Heat oil and add cumin seeds, black pepper, cloves, and cinnamon. Let fry for 2-3 minutes until fragrant. Add onions and cook for 2-3 minutes until golden brown. Add ginger and garlic and cook for another 1 minute.

Next, add half of the coriander leaves, turmeric, chili powder and coriander-cumin powder. Add tomatoes and let cook for 4-5 minutes or until oil starts to ooze out. In goes the peas and minced meat with bones as well ¹/₂ as cup water. Add some more in the cooking process if the meat starts sticking to the frying pan.

Mix and add salt to taste. Don't forget to break apart the meat with your spatula/spoon while it cooks to avoid lumps of meat. Cook for 20-25 minutes over a low flame and finish off with a sprinkle of the remaining coriander leaves.

Serve hot with chapati's, rice or bread and a side of kachumbari.
