Meatless Dinner


Dinner
Ingredients:
• 8 hard boiled eggs, peeled and halved.
• 1 large onion, finely chopped.
• 3 garlic cloves, minced.
• 3 large tomatoes, diced.
• 1 tsp. grated ginger.
• 1 bay leaf.
• 1 tsp. paprika.
• 1 tsp. garam masala.
• 1 tsp. cumin.
• 1½ tsp. coriander powder.
• ½ tsp. turmeric.
• salt to taste.
• 2 Tbsp. cooking oil.

Directions:
Heat the oil in a large cooking pot over medium-high heat. Saute the onion until lightly browned, about 1 minute. Add the ginger and garlic and cook while stirring for another half a minute. Add cumin, paprika, garam masala, coriander, paprika, turmeric and a pinch of salt to the onion mixture. Next, add the tomatoes and simmer for about 4-5 minutes.
Add ½ cup of water, place the bay leaf on top, cover and bring the sauce to a simmer until the tomatoes are completely mashed, about 8-10 minutes. Place the eggs into the sauce and stir gently to coat. 
Serve over steamed rice of your choice.
