This is the best recipe!!! It is a really great summer dish and has a nice fresh test.

Pineapple Salsa Recipe


Ingredients

⤑4 pork chops
⤑Pineapple salsa
⤑Salt and pepper to taste
⤑½ Kg washed whole potatoes
⤑Aluminum foil

Method

Marinate chops and refrigerate for 2 hours. Preheat oven to 150˚C. Remove the chops from the marinade, wrap in aluminum foil and roast until browned, (meat should no longer be pink inside) basting with the marinade every so often to keep it moist. Peel potatoes and leave them whole.

Pre-boil potatoes until slightly undercooked. Drain. Place potatoes with the pork in the roasting pan, and pour marinade on top. Cover with foil. Roast for an additional 10-15 minutes. Remove from oven and serve with spinach or a green salad.
