Quiche muffins recipe

Made some quiche muffins for kids school lunch tomorrow. Filled with spinach and cauliflower (my kids swear they hate cauliflower, however magically they like these)
Spinach and cauliflower quiche (mini pashtida)

Quiche muffins

4 eggs
³/₄ cup sour cream
1 tablespoon cream cheese
¹/₂ cup of defrosted spinach (I used the frozen in a bag)
1 cup of finely diced cauliflower florets
³/₄ cup of flour
1 tsp. baking powder
¹/₂ tsp. baking soda
¹/₂ cup milk
1 cup any shredded cheese (I used havarti)

First whisk really well: eggs, sour cream, and cream cheese. Then add spinach and cauliflower. Mix. Add shredded cheese, flour, baking soda, and powder. Mix. Then add milk slowly while mixing.

Spray muffin pan well and fill the tins with the mixture. Bake on 350 for about 30 min or until golden.
Tips: Make sure to drain all the water out from the spinach using paper towels.
Make sure the cauliflower is chopped super small so the kids don't notice.
