Coated in coconut, then pan fried, this crisp fish dish makes a speedy fish supper for two. Serve with a refreshing lettuce and cucumber salad laced with sweet chili.

Quick Buttered Fish in Chili Coconut Sauce Recipe

Ingredients
1 tsp. butter
1 red onion
½ cup fresh coriander leaves (dhania)
2-3 large sized fish fillets (sea fish/tilapia)
2 cups coconut milk/cream(makes sauce thicker)
Salt and black pepper to taste.

Method
Dice onions and chop coriander (dhania). In a frying pan add 1 tsp butter, onions, and coriander (dhania). Cook for 4-5 minutes. Add salt and black pepper. Add the fish pieces and cover with coconut milk/cream. Cover the fish and simmer for 10 minutes. Serve with (coconut) rice and steamed vegetables.
