Pork stew

• 1 kg pork, cut into cubes.
• 1 large onion, finely chopped.
• 1 green chili, finely chopped.
• 4 - 6 green onions, finely chopped (save the green part for garnish).
• 1 Tbsp. fresh ginger, minced.
• 1 tsp. garlic powder.
• ½ tsp. paprika
• salt to taste.
• ¼ tsp. black pepper.
• 1 Tbsp. soy sauce.
• ½ Tbsp. brown sugar.
• 1 Tbsp. vinegar.
• ¼ cup cooking oil.

Rinse the pork cubes and transfer to a large cooking pot. Add enough water to cover the pork. Stir in the ginger, green onion, garlic powder, and chilies. Cover and bring to a boil, for about 5 - 10 minutes. Drain the meat and set the broth aside for use later.

In a large frying pan, heat the cooking oil over medium heat. Saute the onions until they turn golden brown. Stir in the green onions (white part), chili, and ginger, cook for about 1 minute. Add in the garlic powder, paprika, black pepper, and salt. Cook for another minute while stirring to prevent burning.
Next, add the pork cubes, brown sugar, vinegar and soy sauce. Stir the meat to entirely coat with the sauce. Cook for about 5 minutes and then reduce the heat. Continue to cook while stirring until the sauce thickens, add the broth sparingly until you are satisfied with the consistency. Once done, turn off the heat and garnish with the rest of the green onions.
Serve immediately with steamed rice of your choice.
