Tomato Chili Omelet Recipe

This is the most requested breakfast at my house for birthdays!!! I had never heard of one until I married my hubby. So simple, yet so good!
Tomato Chili Omelet


1 small onion diced
2 medium-sized tomatoes diced
4 eggs
Salt and pepper to taste
Olive oil


Lightly coat (non-stick) frying pan with olive oil. Add onions and tomatoes, fry lightly. Add salt and pepper to taste.
Beat the eggs separately then stir into the onion tomato mixture. Cook on low heat. When the omelet is almost set, flip once to cook on the other side.
