Quick and Easy Lemon Rice Recipe

This is one of favorite comfort food which is so simple to make and the flavors, amazing!! Coming from a place where rice is a staple diet, there are some amazing things you can do to rice to put a twist on the same white rice. Lemon Rice will fix that – it’s anything but not boring! It’s fresh, bright flavor is a great accompaniment to seafood and chicken.

Lemon Rice Recipe

Lemon Rice
You can cook up a batch of rice ahead of time, store it in the fridge, then make Lemon Rice right before you serve dinner – so quick and easy! (You could use take-out rice in this recipe too.) Lemon Rice is my new favorite side dish and once you try it, it might just become yours too!

⏩Serves: 4 servings
⏩Preparation time-15 minutes


➭300 gm (uncooked quantity) cooked/boiled rice
➭50 gm peanuts
➭4-5 tbsp lemon juice
➭2 dry red chili
➭2 chopped green chili
➭12 to 15 fresh curry leaves
➭3 (medium) finely chopped onion
➭1 tsp mustard seeds
➭¹/₃ tsp turmeric powder
➭3 tbsp cooking oil
➭Salt to taste


Roast the peanuts for 2 minutes on a low-medium flame and keep it aside. Heat a pan, add oil and let it heat properly, now add mustard seeds, dry red chili, and green chili, fry it for few seconds, curry leaves and chopped onion, fry it on a medium flame for 2 minutes.

Add roasted peanuts, turmeric powder and salt to taste, mix it and cook for ¹/₂ minute on low flame. Then add lemon juice and mix it, Cook it for ¹/₂ minute on low flame. Put or add boiled/cooked rice and mix it gently, cover the pan and cook it on low flame for 1-2 minutes.

Turn off the flame, ready to serve.
