Butter chicken with rice

This recipe is easy, creamy, flavorful and mild on the spectrum of Indian curries. I use chicken drumsticks because I love the taste of it but you can also use chicken breasts to make this.

One thing you don’t want to rush in this easy butter chicken recipe is the caramelizing of the onions – it’s a really important layer of flavor in any Indian curry, and especially in a sweeter one like this.

I had the dish with some vegetable pilau rice. If you want the sauce to be thicker, add some more tomato paste and more yogurt will make it a lighter red. I hope you enjoy this recipe.

Ingredients


For chicken & marinade:

☛1 kg chicken
☛2 cloves garlic, minced
☛1 tbsp garam masala
☛1 tsp kosher salt
☛¹/₄ cup vegetable oil

For sauce:

☛¼ cup vegetable oil
☛¹/₄ cup butter
☛2 ½ cups chopped onion (about 2 medium-large)
☛2 tbsp coarsely chopped garlic
☛2 tbsp garam masala
☛2 tsp paprika
☛¼ tsp cinnamon
☛2 tsp kosher salt, or to taste
☛2 cups diced or canned tomatoes
☛1 cup green peppers
☛¾ cup yogurt
☛¹/₄ cup ketchup
☛¹/₄ cup tomato paste
☛2 tablespoons soy sauce
☛Chopped cilantro (optional)

Instructions


For marinade:

Combine all ingredients in a zip-top bag or shallow baking dish, massaging the marinade into the chicken. Let stand at room temperature, or marinate in the fridge overnight and throw them in the oven and bake at 350 degrees.

For sauce:


Heat oil over medium heat in a large saucepan. Add onions and slowly cook until golden, about 20 minutes, reducing heat if they are getting crispy or browning quickly. Add garlic and cook until fragrant, about 1 minute. Stir in garam masala, paprika, cinnamon, and salt; cook 1 minute more. Add tomatoes and green peppers; cook 2 minutes, then carefully puree using a standing blender.

Return sauce to saucepan, add yogurt, ketchup, tomato paste, and soy sauce and bring to a simmer. Once the chicken is out of the oven, make sure it is almost well done. Add chicken to the sauce, cover, and simmer over medium-low heat until cooked through about 10 minutes. Serve sprinkled with cilantro, if desired.
