Spicy potatoes to add a kick to dinner

This recipe is a winner. My family is fond of spicy foods and I made them with chapati for dinner. I will definitely make these again. We had a few left over and they quickly went the next day. The kids gobbled them up! Liven up your weekend with this recipe idea.

Microwave Spicy Potatoes Recipe

Just in case you still do not want to cook in a microwave, you can make the same recipe in the conventional method.

Ingredients

➧ 4, large potato
➧ 2, chopped onion
➧ 2 tbsp. of vegetable oil
➧ ½ tsp, mustard seeds
➧ ½ tsp. cumin seeds
➧ 2, broken dry red chilies (optional)
➧ 10 to 15 curry leaves
➧ 2, broken green chili (optional)
➧ ½ tsp turmeric powder
➧ Freshly chopped coriander leaves to garnish
➧ Salt to taste

Instructions

Wash and pat dry the potatoes, no need to peel them yet. Using a fork, pierce the potatoes in multiple places. Place the potatoes in a microwave-safe bowl half filled with water. Cook the potatoes in microwave on high for 15 minutes. Please note that smaller potatoes will take lesser time to cook, so do check them halfway between the cooking time. Once cooked, let the potatoes cool down for 10 minutes. Then peel and cut them into small cubes. Set aside.

In a microwave safe dish, add the vegetable oil. Microwave it on high for 2 minutes.

Next add mustard seeds, cumin seeds, dry red chilies (optional), curry leaves, green chilies (optional) chopped onion and turmeric powder. Mix everything well. Microwave on high for 2 minutes first, take it out and stir well. Again microwave on high for 3 more minutes. Onions should be soft and translucent by end of this step. If your microwave is of lesser power, cook it for a minute more. Add boiled potato cubes to the dish and season with salt to taste. Mix well. Microwave on high for 8 to 10 minutes. Give a final mix and the spicy potato is ready.

Sprinkle freshly chopped coriander leaves and serve hot with rice or chapati
