Preheat the oven to 325⁰F, and put parchment paper on your baking sheet.
Whisk together 1 cup of instant oats, ³/₄ cup of gluten-free flour, 2 ¹/₂ tsp of cinnamon, a dash of nutmeg, a dash of ginger powder, a dash of clove powder, 1 ¹/₂ tsp of baking powder and ¹/₄ tsp of sea salt in a bowl.
In another bowl, whisk 2 tbsp of coconut oil, ³/₄ cup of pumpkin puree, and 1 tsp of vanilla extract. Stir in ¹/₂ a cup of organic maple syrup or coconut nectar. Add this mixture to the flour mixture in the other bowl and stir until incorporated. Do not over stir.
Fold in 2 tbsp of organic dark chocolate chips.
Make 15 rounded scoops with the dough and place on your baking sheet, flattening to your desired size and shape with a spatula.
Place in the oven and bake for 11-14 minutes. Once cooked, let cookies cool for 10 minutes.
