These thin and crispy oatmeal cookies are absolute perfection! Crispy, buttery, and completely addictive – I dare you to eat just one! These are simple cookies and contain no egg in the mixture.

Crispy Oatmeal Cookies Recipe


↦1 ¹/₂ cups quick rolled oats
↦¹/₂ cup all-purpose flour
↦¹/₂ cup brown sugar, packed
↦¹/₂ cup soft butter or margarine
↦¹/₂ tsp. salt
↦2 Tbs. boiling water
↦¹/₂ tsp. baking soda
↦¹/₂ cup chopped walnuts, optional
↦Sugar for tops of cookies


Combine oats, flour, brown sugar, butter and salt into large mixing bowl. Blend until butter is thoroughly worked into a mixture.

Stir together water and baking soda. Stir soda mixture into oat mixture. Add nuts, if used, blending well.

Shape into balls the size of walnuts. Flatten with the bottom of a glass dipped in water, then dipped into sugar.

Bake at 375° for 8 minutes until golden and crispy. Cool on racks.
