If you’re in a need of a healthy easy lunch recipe to make for the family, this recipe is it! It feeds an army and is freaking delicious!

What I love about this recipe is how easy it is. If you don’t have boneless skinless chicken breast you can easily sub it with a Rotisserie Chicken. Um… hello, that takes ALL the work out of it! No, you have NO excuses!

Just shred the chicken, slice up a few extras, mix the wet ingredients and you’re good to go! This recipe lasts up to a week in the refrigerator and doesn’t dry out!

A CHICKEN SALAD RECIPE that’s low carb, high protein, and gluten-free! 

If you love chicken salad, then you are going to go ga-ga for this recipe. After my first bite, I had an OMG moment. How can this taste THIS GOOD and be HEALTHY!

Ingredients


☛1 bag lettuce
☛1 cup fresh spinach
☛Chicken chunks
☛1 green pepper
☛5 chopped tomatoes
☛Thinly sliced cucumber
☛Carrots
☛1 clove garlic
☛1 tsp vegetable oil
☛Mango

Method

Seasoning the chicken
Season the chicken.
Cooking the chicken
Cook the chicken
Mix the salad: Lettuce, spinach, green pepper, cucumber, carrot, tomato and mango slices.

CHICKEN SALAD
Add the chicken on top and serve. 

NOTE:
Use a healthy dressing low in fat and sugar for a perfect meal.
