WHOLE WHEAT COCONUT COOKIES
Cookies are a favorite among kids. I often make wheat flour cookies at home. These yummy eggless coconut cookies are a treat for Christmas.

Here I have used powdered sugar for making whole wheat coconut cookies. But they can also be made with brown sugar or with cane sugar.

These coconut cookies without eggs are very easy to make and use very few ingredients for preparation namely whole wheat flour, sugar, butter, and coconut. It does not make use of baking powder or baking soda or any such ingredients. This can be considered as a healthy snack recipe.

Creative ways to make sure you would be getting enough fiber and fats.

WHOLE WHEAT COCONUT COOKIES RECIPE


INGREDIENTS

⏩1 cup whole wheat flour
⏩1 tablespoon fine sooji or semolina
⏩½ cup sugar
⏩¼ cup desiccated coconut for garnish
⏩½ cup butter
⏩a pinch salt
⏩½ teaspoon vanilla extract
⏩2 - 3 tablespoons milk

METHOD

  • Preheat oven to 180⁰ and line a baking tray with parchment paper. Keep aside.
  • Add sugar to a mixer jar and grind it to a fine powder. Keep aside.
  • In a mixing bowl, add butter and powdered sugar. Beat well until it becomes light and creamy. Add salt, vanilla extract and mix well.
  • Now add the whole wheat flour, fine semolina, and desiccated coconut, mix well until well combined.
  • Add milk little by little and mix well to get a soft and smooth dough.
  • Pinch out small pieces of dough and roll it into a ball. Take each ball, press it gently and flatten it with a fork.
  • Spread desiccated coconut on a plate. Dip the top side of the cookies on the coconut and place them onto the baking tray around 1-inch apart from each other.
  • Place the baking tray on the middle rack and bake them at 180⁰ for 18 - 20 minutes or until the top of the cookies become golden brown in color.
  • Remove them from the oven and allow them to cool down for 2 - 3 minutes.
  • At this stage, the cookies will be soft. Remove them gently using a spatula and place them on a wire rack. Allow them to cool and they will become crunchy.
  • whole wheat coconut cookies are ready. Let them cool completely and then store them in an air-tight container.
